  • Prep time: 15 mins
  • Serves: 6

  • 500gm lean beef mince
  • 1/2 red onion, finely chopped
  • 1 tbsp. kalamata olives, chopped
  • 2 tbsp. parsley , finely chopped
  • 1 egg (whole)
  • 6 sourdough buns
  • 1 bunch rocket leaves, washed
  • 3 roma tomatoes
  • 1 red onion, finely sliced
  • 1 garlic clove, peeled and halved

  1. In a mixing bowl, combine mince, finely chopped onion, olives, parsley and egg. Season with salt & pepper, leave to rest in fridge for about 20 minutes.
  2. Fire up your BBQ to a medium-high heat, 190°C
  3. Divide your burger mix into 6 round patties. Place onto BBQ and cook. You should only turn once, approx 6-8 minutes per side.
  4. Grill your sliced red onion on the side while the burgers are cooking.
  5. Toast your buns! Slice your buns in half and toast, then rub fresh garlic clove over the inside of the toasted bun for flavour.
  6. To assemble, place rocket leaves onto buns, then slice tomatoes. Season lightly with salt & pepper. Then place the beef patty in the middle, top with grilled onion and bun lid.
