Raspberry Ginger Beer

Lovely summery ginger beer, with raspberries and mint.

  • Makes: 1.25 litres (Approx)
  • Prep time: 10 mins


  • 150g knob ginger, peeled
  • Thick zest strips of 2 lemons
  • 2/3 cup lemon juice
  • ½ cup frozen raspberries
  • Handful mint leaves
  • 5 tablespoons coconut sugar
  • 1 litre soda water
  • Mint sprigs and extra raspberries, to serve


  1. Grate ginger straight into a bowl, add lemon zest, juice, raspberries, mint leaves and sugar.
  2. Smash with a mortar and pestle or a rolling pin for 1 minute to release the flavours and dissolve the sugar.
  3. Pass mixture through a sieve and add cold soda water.
  4. Garnish with extra mint leaves and raspberries to serve.
