  • 1 tbsp demera sugar
  • Ice cream to serve

  • 200g cream

TOOLS REQUIRED

Method

  1. Cut pastry into 10cm squares. Place pastry on a clean working surface in a diamond position, put 1 generous teaspoon of jam in the centre, top with 10g of chocolate on top of the jam and 4 raspberries. Fold two sides of the diamond in to the centre. Lightly brush the pastry with egg and sprinkle with sugar, repeat with remaining squares. Refrigerate until you are ready to cook.
  2. Place a BBQ Buddy Pizza Stone on the cold BBQ and let it heat up with the BBQ. Heat BBQ to 200°C with the hood down.
  3. Carefully place Danishes on the pizza stone and cook with the lid down for 12 minutes, or until golden.
  4. Meanwhile, place remaining chocolate in a small glass bowl, place in a microwave on low for 4 to 5 minutes until melted, stir through cream until well combined. Serve Danishes with vanilla ice cream and drizzle both with the chocolate sauce and serve with extra raspberries.
