Buttermilk Pancakes with BBQ Peaches & Lime Mascarpone

Ingredients - Pancakes

  • 350ml buttermilk
  • 1 egg
  • 50g melted butter
  • 1 cup plain flour
  • ¼ cup caster sugar
  • ½ tsp bi carb soda
  • ½ tsp baking powder
  • Pinch salt

Ingredients - Topping

  • 4 peaches, quartered
  • 2 tbsps sugar
  • Juice of 1 lime
  • Zest of 1 lime
  • 250g mascarpone cheese, at room temperature

Method

  1. Place buttermilk, egg and melted butter in a jug and mix together.
  2. Mix flour, caster sugar, bi-carb and baking powder in a separate bowl. Make a well in the centre of the flour and pour in the wet ingredients, whisk to combine all the ingredients. Set aside.
  3. In a small bowl combine mascarpone and lime zest, stir to combine.
  4. Mix sugar and lime juice together, sit the peaches flesh side down in lime juice for a few minutes.
  5. Preheat the BBQ to a medium-high heat and lay a hotplate liner over the grill. Sear off the peaches on the grill for 2 minutes each side, until browned and caramelised. Drizzle the remaining lime juice over the hot peaches for extra flavour.
  6. Place the hotplate liner on the flat hotplate, increase heat and lightly grease the liner with butter or oil.
  7. Place ¼ cup batter onto the liner and cook until bubbles appear and the batter begins to pop. Flip the pancakes and cook for a further minute on the other side.
  8. Serve pancakes warm, topped with mascarpone and caramelised peaches.
