HALOUMI & ZUCCHINI CAKES WITH SLICED CHORIZO & BARBECUE GRILLED EGGS

The perfect way to start to your weekend! Grill perfectly round eggs on the barbecue with BBQ Buddy Egg Rings. Grill them to your liking and enjoy together with sliced chorizo and delicious haloumi and zucchini cakes.

INGREDIENTS

  • 650g zucchini (approx. 5)
  • 1/2 teaspoon salt
  • 250g haloumi
  • 1/4 cup finely chopped dill
  • 1/4 cup finely chopped mint
  • 1/8 tsp chilli flakes
  • 4 shallots, finely sliced
  • 1 cup self raising flour
  • 6 eggs
  • 250g thick chorizo sausage, cut into 1/2 cm slices
  • Tomato relish to serve

Method

  1. Grate zucchini into a bowl and sprinkle with salt, allow to sit for 5 minutes and then squeeze liquid out of the zucchini, by squeezing in hard over a colander. Grate haloumi and place in a bowl with the zucchini. Add the dill, mint, chilli and shallots and combine well. In a separate bowl, add flour and 2 eggs and mix well. Add the egg mix to the zucchini mix and combine well.
  2. Place a BBQ Buddy Hot Plate Liner onto a flat BBQ plate and heat BBQ to a medium - high heat. Place 1/4 cups worth of mixture onto the Hot Plate Liner flattening mixture slightly. Cook for 3 minutes each side, until golden brown and cooked through.
  3. Place 4 BBQ egg rings onto the Hot Plate Liner and crack eggs directly into the rings, cook for 3 minutes with the hood of the BBQ down, or until cooked as desired.
  4. Carefully wipe clean the Hot Plate Liner and place the chorizo onto the liner. Cook for 2 minutes each side until crispy and golden.
  5. Serve zucchini cakes topped with a fried egg, chorizo slices and tomato relish.
